Ultimate Guide To Thai Noodles

Thai noodles play a big part in the daily Thai diet and are enjoyed in so many ways. It can be daunting to see all the noodle stalls and knowing what version of Thai noodles to order. But once you know what you like, you can order a bowl of completely customised noodles.

Let me show you the whole noodle spectrum – and the best ways to enjoy them.

These are five main types of Thai noodles.

Sen Mee: The very thin rice noodles are called sen mee.

Sen Lek: The medium size rice noodle that is used in Pad Thai.

Sen Yai: The biggest one is about an inch wide.

Bah mee: Standard egg noodles are called bah-mee and you can tell them by their yellow colour.

Wun Sen: Finally, for the carb conscious, wun sen aka glass noodles are made from mung beans and are clear in colour.

Ordering Your Bowl of Thai noodles

When you are ordering noodle soups, the first thing to do is choose the noodle then the rest.

Kway Teow Nam Sai ก๋วยเตี๋ยวน้ำใส
Kwai Teow Nam Sai

Kway Teow Nam Sai is one of the most basic Thai noodles soups but don’t be misled with the word basic as this dish packs a lot of flavour. Just the soup alone is enough to make you crave for more and the key for making its soup taste really good are pork bones, radish and spices. The piping hot soup is then poured in a bowl with rice noodles, minced meat, fish balls and an assortment of vegetables.

Boat Noodles ก๋วยเตี๋ยวเรือ

Another local favourite is the Boat Noodles aka Kway Teow Ruea. This dish was traditionally served from boats. The soup is usually a deep brown color and the taste is spicy, savory, rich and bursting with flavors. This is usually paired with pork, beef or meatballs, liver, morning glory and bean sprouts.

Yen Ta Four เย็นตาโฟ

This is a distinctively pink noodle dish in Thailand. The pinkish-red pickled bean curd (tofu), together with the ingredients makes it looks extremely flavourful. This will generally come with fish and shrimp balls, blood cubes, some pork, and morning glory.

Kuai Tiao Tom Yam ก๋วยเตี๋ยวต้มยำ
Kuai Tiao Tom Yam

The combination of Thai noodles with Tom Yam! Think of this as a noodle soup – on steroids! Added to the mix are crushed peanuts, lime, chilli flakes, sugar and fish sauce. You can order it with pork, fish and seafood.

Flavouring your noodles

Once you have your noodles served, its time to flavor it however you want. The Thai noodle stalls usually have condiments placed on each tables such as chilli powder, fish sauce, sugar and chillies in rice vinegar.

My advice to you is to add small amounts of each till you get it perfect. And if you are putting in fish sauce to hype up the saltiness, pour it into your spoon first so no huge spill end up in your soup.
