These are five main types of Thai noodles.
Sen Mee: The very thin rice noodles are called sen mee.

This is a distinctively pink noodle dish in Thailand. The pinkish-red pickled bean curd (tofu), together with the ingredients makes it looks extremely flavourful. This will generally come with fish and shrimp balls, blood cubes, some pork, and morning glory.
The combination of Thai noodles with Tom Yam! Think of this as a noodle soup – on steroids! Added to the mix are crushed peanuts, lime, chilli flakes, sugar and fish sauce. You can order it with pork, fish and seafood.
Flavouring your noodles
Once you have your noodles served, its time to flavor it however you want. The Thai noodle stalls usually have condiments placed on each tables such as chilli powder, fish sauce, sugar and chillies in rice vinegar.
My advice to you is to add small amounts of each till you get it perfect. And if you are putting in fish sauce to hype up the saltiness, pour it into your spoon first so no huge spill end up in your soup.
